Tex Mex Red Chile Rice with Cilantro

A flavorful Tex-mex rice with a refreshing touch from fresh cilantro.  A good side dish to the Tex Mex Cheese Enchiladas with Chile con Carne Sauce.

Ingredients:

  • 1 T vegetable oil
  • 1/4 onion, finely chopped
  • 1 garlic clove, minced
  • 2 tsp. chile powder
  • 1 tsp. cumin
  • 1 T salt
  • 1 T tomato paste
  • 1 cup white rice
  • 2 cups chicken broth
  • 1/4 cup cilantro, chopped

Directions:

  1. In a non-stick sauce pan, saute onion in oil until tender.
  2. Add everything else except broth and cilantro and saute 1 more minute.
  3. Add broth and bring to a simmer on high heat.
  4. Cover pot and turn heat to low, and let simmer for 15 minutes.
  5. Turn off heat, and let rice steam for 10 minutes.
  6. Remove lid, add cilantro and fluff rice.

Notes:

If you prefer having more vegetables in your Mexican rice, try 1/2 cup veggies added in with the broth.  For example, corn, peas, finely chopped bell pepper or a combination.
