Classic Bechamel Sauce

This classic bechamel sauce is a quick and easy component of many Old World pasta dishes.


  • 1/3 Cups butter
  • 1/3 Cups all-purpose flour
  • 1 tsp salt
  • Dash of ground nutmeg
  • 3 Cups milk


  1. In a medium saucepan, melt the butter over low heat
  2. Whisk in flour, salt, and nutmeg
  3. Cook over low heat, stirring constantly until bubbling smoothly, then remove from heat
  4. Stir in milk, and while stirring constantly, heat to boiling
  5. After 1 minute, cover and keep warm.  The sauce should have the consistency of heavy cream
