Southwest Spice-rubbed Pork Tenderloin

One of the best spice rubs I\\\'ve come across.  With roasted vegetables, the pork tenderloin delivers an impressive meal.


  • 1-1 1/2 lb. pork tenderloins
  • 2 tsp. dried oregano
  • 2 tsp. ground cumin
  • 1 tsp. ancho chile powder
  • 1 tsp. smoked paprika
  • 1 tsp. coarse kosher salt
  • 1 T extra-virgin olive oil


  1. Preheat oven to 400 degrees F.
  2. Stir oregano through salt in a small bowl, then rub the mixture all over the tenderloins.
  3. Heat oil in heavy, large non-stick skillet over med-high heat. Add pork to skillet and sear (cook until browned) on all sides, about 5 minutes.
  4. Place pork in a roasting pan or on a baking sheet, and roast uncovered until instant-read thermometer inserted into center of pork reads 145 F, about 18 minutes.
  5. Let pork rest 5 to 10 minutes then transfer to a work surface.
  6. Cut pork cross-wise into 1/2 inch thick slices.  Arrange on serving platter and serve with roasted vegetables.
